This week, I decided to try out a new, refreshing recipe. This dish was perfect! All the fresh ingredients are perfect for a light lunch or even a snack! I swear I could eat this everyday, it is that delicious! I took it to university as a packed lunch with a tortilla wrap and my friend could not stop asking me for some. This recipe is also perfect for when you have a few friends over and need something easy to serve them. The fresh prawns combined with the freshly chopped vegetables go so well together. This meal could not be easier to make as all it takes is some chopping and mixing together. It is low in calories and high in nutrients. Without further ado, here is the recipe:-
PRAWN AND MANGO SALSA
- 8-10 cooked prawns
- Half a large mango
- Half an avocado
- 1/4 red onion
- 1/4 red/yellow or orange bell pepper
- A few coriander leaves
- The juice of half a lime
- 1 small tomato
Chop all your vegetables, mango and coriander and add them to a bowl
Toss your cooked prawns into the bowl. Squeeze the juice of half a lime onto the mixture and mix.
Save with a tortilla wrap, on toast, on its own....the options are endless!
