VEGGIE FRITTATA

 

This recipe is perfect for those mornings when you just feel like treating yourself to something a little out-of-the-norm. I would serve this recipe as part of a brunch for me or someone else particularly as it is too beautiful to be eaten alone 😉.

The vegetables I chose for this recipe worked well together but of course you can choose whichever vegetables you would like. For all the carnivores out there, you can choose to add any meat or fish you would like. A great choice for this would be smoky bacon or salmon. Without further ado, here is the simple recipe for the vegetable frittata!

 


 

Ingredients (1 portion):-

The frittata:

2 eggs

3 small mushrooms

1/2 spring onion

1/4 red bell pepper

A pinch of salt

A pinch of chilli powder

Olive oil

Optional garlic, spinach side:

A handful of spinach

1/2 a clove of garlic

A pinch of salt

Olive oil


How to:-

  1. Preheat your oven to 180 degrees celsius.
  2. Chop all your vegetables into fine pieces and fry them in a pan with olive oil until soft.
  3. Crack your eggs into a bowl and whisk them in with your salt and chilli powder.
  4. Place your vegetables in a shallow ramekin and pour the egg mixture over it. Put in the oven for 10 minutes or until cooked through.
  5. For the spinach side, wilt your spinach in a pan with olive oil. Add your garlic in the last 30 seconds of cooking.
  6. When your frittata is ready, serve with your spinach, top with chopped parsley and enjoy!
