MAKE-AHEAD BANANA BREAKFAST MUFFINS | MEAL PREP

 

Who doesn’t like banana muffins? Better yet, healthy banana muffins to sit better with your conscience?! Well, here is a banana muffin recipe that you can make at the beginning of your week and eat as a make-ahead breakfast. Trust me, this will make your mornings much easier! Without further ado, here is the recipe for the warm banana oat muffins!

BANANA OAT MUFFINS!

Servings 6 muffins

Ingredients

  • 3 ripe bananas
  • 3 tbsp low-fat greek yogurt
  • 1 tbsp cinnamon
  • 2 eggs
  • 2 tbsp honey/maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour (Ground oats)
  • 1 tsp baking powder

Topping (Optional)

  • A sprinkle of oats and almond flakes

Instructions

  1. Preheat your oven to 180*C.

  2. In a large bowl, mash your banana with a fork.

  3. Add eggs, greek yogurt, vanilla extract, honey, and mix.

  4. Pour the flour into you bowl as well as the baking powder and mix completely.

  5. Scoop portions of the mix into your greased muffin tins.

  6. Optional- Top with your oats and almond flakes and place in the oven.

  7. Bake for 20 minutes or until the muffins have risen. 

  8. Enjoy as a make-ahead breakfast during the week! 


 

To store, put the muffins in a zip-lock bag or air tight container. Freeze for up to 2 months or place in the fridge for up to 4 days.
