If you’re looking for an easy yet light lunch to make for those days when you don’t have much time, then this recipe is for you! Although the recipe uses turkey, you can feel free to use any leftover meat you have such as chicken or pork. I used black beans to increase the protein in the taco and the combination was delicious! Without further ado, here is the recipe!
TURKEY AND BLACK-EYED PEA TACOS
- 3 tbsp black-eyed peas
- shredded turkey/chicken (Quantity to your preference)
- lettuce (Quantity to your preference)
- red onion (Quantity to your preference)
- 2 taco wraps
The Yogurt Sauce
- 3 tbsp 0% fat Greek yogurt
- A pinch salt
- 1 tbsp dried parsley
- 1 clove garlic (Crushed)
- 1 pinch black pepper
Chop up your onion and tear up your lettuce.
Add all your 'filling' ingredients to your tacos.
Mix all your yogurt sauce ingredients together.
Add to your taco and enjoy!
