The title of this recipe may be a mouthful but you will enjoy every mouthful of it! As I’ve mentioned in previous posts, kpakpo shito sauce is a Ghanaian pepper sauce made from green chillis, onions, oil and other spices which you can make yourself or buy. If you are in the UK or another Western country I’m pretty sure most afro-caribbean stores have a version of it in stock. It is super spicy and bursting with flavour!
We are all used to chilled salad recipes but I was in the mood for a more comforting yet nutritious meal. This warm salad is perfect and it is filled with superfoods such as quinoa and kale. Trust me, the recipe may not seem like anything extravagant but I am not one to make a bland meal. The salad was so delicious and I almost finished 2 portions of it! Of course, that is when I knew that it was worthy of a blog post. So, without further ado, here is the recipe!
WARM KPAKPO SHITO (GREEN CHILLI) SPICED PRAWN, KALE AND QUINOA SALAD
- 150 g cooked and peeled king prawns
- 6 tbsp cooked quinoa
- 1 tsp kpakpo shito pepper sauce (home made or store bought)
- extra virgin olive oil
- 1 spring onion
- 2 small tomatoes
- salt to taste
- 2 cloves of garlic
- 2 handfuls of curly kale
Cook your quinoa according to packet instructions.
Add 1 tbsp of olive oil into a frying pan and add your kale, stir frying until softened.
Crush or chop your garlic cloves and add them to the kale.
Chop your tomatoes and spring onions and add them to the pan, stir frying for 1 minute.
Add your prawns and quinoa and stir for 1 minute.
Add salt to taste and your kpakposhito sauce. Stir until totally combined, serve and enjoy!x
