Plantain Waffles

- 1 plantain ripe
- 1 tsp ginger grated
- 1/2 cup flour oat/quinoa/almond/wholewheat
- pinch salt
- 1/2 tsp nutmeg
- 1 egg beaten
- coconut oil to grease the waffle maker
Mash your plantain until it is a smooth texture.
Mix the rest of your ingredients into the plantain (apart from the coconut oil).
Grease your waffle maker with your coconut oil and add your mixture.
Cook until the waffle is golden brown.
Serve with your favourite toppings (either sweet or savoury) and enjoy! x
