Preheat your oven to 180*C.
In a large bowl, mash your banana with a fork.
Add eggs, greek yogurt, vanilla extract, honey, and mix.
Pour the flour into you bowl as well as the baking powder and mix completely.
Scoop portions of the mix into your greased muffin tins.
Optional- Top with your oats and almond flakes and place in the oven.
Bake for 20 minutes or until the muffins have risen.
Enjoy as a make-ahead breakfast during the week!
