BANANA OAT MUFFINS!

Servings 6 muffins

Ingredients

  • 3 ripe bananas
  • 3 tbsp low-fat greek yogurt
  • 1 tbsp cinnamon
  • 2 eggs
  • 2 tbsp honey/maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour (Ground oats)
  • 1 tsp baking powder

Topping (Optional)

  • A sprinkle of oats and almond flakes

Instructions

  • Preheat your oven to 180*C.
  • In a large bowl, mash your banana with a fork.
  • Add eggs, greek yogurt, vanilla extract, honey, and mix.
  • Pour the flour into you bowl as well as the baking powder and mix completely.
  • Scoop portions of the mix into your greased muffin tins.
  • Optional- Top with your oats and almond flakes and place in the oven.
  • Bake for 20 minutes or until the muffins have risen. 
  • Enjoy as a make-ahead breakfast during the week!
