TATALE (Plantain pancake)
Servings 5 small pancakes (roughly)
- 2 small Overipe plantains (Or 1 large overripe plantain)
- 1 thumb-sized Piece of fresh ginger (Grated)
- 1 large Clove of Garlic (Crushed)
- 2 Small green chillis (Chopped)
- 1/2 Spring Onion
- 1/2 Small white/red onion (Grated)
- 1 pinch Salt
- 3 tbsp Flour of your choice (White, gluten free, oat)
- 2 tbsp Olive oil (For cooking)
In a large bowl, mash your plantain until it is smooth.
Add the rest of your ingredients into the bowl and mix until completely combined.
In a frying pan, add your oil and spoon your plantain mixture in to form the shape of a flat pancake. Do this until all the mixture has been used.
