WARM KPAKPO SHITO (GREEN CHILLI) SPICED PRAWN, KALE AND QUINOA SALAD

Ingredients

  • 150 g cooked and peeled king prawns
  • 6 tbsp cooked quinoa
  • 1 tsp kpakpo shito pepper sauce (home made or store bought)
  • extra virgin olive oil
  • 1 spring onion
  • 2 small tomatoes
  • salt to taste
  • 2 cloves of garlic
  • 2 handfuls of curly kale

Instructions

  • Cook your quinoa according to packet instructions.
  • Add 1 tbsp of olive oil into a frying pan and add your kale, stir frying until softened. 
  • Crush or chop your garlic cloves and add them to the kale. 
  • Chop your tomatoes and spring onions and add them to the pan, stir frying for 1 minute. 
  • Add your prawns and quinoa and stir for 1 minute. 
  • Add salt to taste and your kpakposhito sauce. Stir until totally combined, serve and enjoy!x
