Cook your quinoa according to packet instructions.
Add 1 tbsp of olive oil into a frying pan and add your kale, stir frying until softened.
Crush or chop your garlic cloves and add them to the kale.
Chop your tomatoes and spring onions and add them to the pan, stir frying for 1 minute.
Add your prawns and quinoa and stir for 1 minute.
Add salt to taste and your kpakposhito sauce. Stir until totally combined, serve and enjoy!x
