EASY AND WHOLESOME TILAPIA LIGHT SOUP

Ingredients

  • 1 medium-sized tilapia fillet (cleaned and de-scaled)
  • 1 red onion
  • 500ml water
  • 3 medium-sized tomatoes
  • 5 cloves of garlic
  • 1 medium ginger root
  • 5 habañero/kpakpo shito peppers
  • 1 tsp roasted curry powder
  • 1/2 tbsp dried basil
  • Salt to taste
  • 2 100g fish seasoning cubes

Instructions

  • Clean and cut your tilapia into small pieces. 
  • In a blender, add your chopped red onion, garlic, ginger and a splash of water. Blend until smooth. 
  • Place your tilapia pieces into a large pot along with your water, fish seasoning cubes and blended spice mix. 
  • Add your whole tomatoes and chilis to the pot. Place on a medium heat.
  • After 5 minutes, take the tomatoes and chills out and add them to a blender and blend. After a further 5 minutes, take out the tilapia pieces and set them to the side.
  • Pour your blended tomato and chilli mixture back in the pot. Add your roasted curry powder and salt to taste. Add extra whole peppers if you like. Cover and let cook for 10 minutes.
  • Add your tilapia pieces back into the pot and cook for a further 5 minutes. Take out and enjoy! x
