Preheat your oven to 180 degrees celsius.
Chop all your vegetables into fine pieces and fry them in a pan with olive oil until soft.
Crack your eggs into a bowl and whisk them in with your salt and chilli powder.
Place your vegetables in a shallow ramekin and pour the egg mixture over it. Put in the oven for 10 minutes or until cooked through.
For the spinach side, wilt your spinach in a pan with olive oil. Add your garlic in the last 30 seconds of cooking.
When your frittata is ready, serve with your spinach, top with chopped parsley and enjoy!
