VEGGIE FRITTATA

Ingredients

  • 2 eggs
  • 3 small mushrooms
  • 1/2 spring onion
  • 1/4 red bell pepper
  • A pinch of salt
  • A pinch of chilli powder
  • Olive oil

Optional Garlic, Spinach Side Salad

  • A handful of spinach
  • 1/2 a clove of garlic
  • A pinch of salt
  • Olive oil

Instructions

  • Preheat your oven to 180 degrees celsius.
  • Chop all your vegetables into fine pieces and fry them in a pan with olive oil until soft.
  • Crack your eggs into a bowl and whisk them in with your salt and chilli powder.
  • Place your vegetables in a shallow ramekin and pour the egg mixture over it. Put in the oven for 10 minutes or until cooked through.
  • For the spinach side, wilt your spinach in a pan with olive oil. Add your garlic in the last 30 seconds of cooking.
  • When your frittata is ready, serve with your spinach, top with chopped parsley and enjoy!
