OFAM (PLANTAIN CAKE)

Ingredients

  • 2 very ripe (black) plantains
  • 1 tbsp freshly grated ginger
  • 3 tbsp tom brown flour/plain flour
  • 1 tsp chilli powder
  • A pinch of salt
  • 1 tbsp coconut oil (instead of palm oil in the original recipe)

Instructions

  • Preheat your oven to 180*C.
  • Mash two ripe plantains in a bowl. 
  • Add your tom brown/other flour, ginger, coconut oil, chilli powder and other seasoning. Mix thoroughly.
  • Line a loaf tine with coconut oil and pour the mixture in. 
  • Bake in the oven for 25 minutes or until cooked through. The cake should be moist. It is ready when you stick a toothpick in the cake and it comes out dry. 
  • Enjoy with some jam or other sweet toppings or have it with my guacamole recipe!
