Preheat your oven to 180*C.
Mash two ripe plantains in a bowl.
Add your tom brown/other flour, ginger, coconut oil, chilli powder and other seasoning. Mix thoroughly.
Line a loaf tine with coconut oil and pour the mixture in.
Bake in the oven for 25 minutes or until cooked through. The cake should be moist. It is ready when you stick a toothpick in the cake and it comes out dry.
Enjoy with some jam or other sweet toppings or have it with my guacamole recipe!
