PRAWN AND MANGO SALSA

Ingredients

  • 12 cooked prawns
  • 1/2 Mango
  • 1/2 avocado
  • 1/8 red onion
  • 1/4 red/yellow or orange bell pepper
  • 1 tbsp coriander leaves
  • 1 tbsp Lime juice
  • 1 small tomato
  • 1 tbsp olive oil

Instructions

  • Chop all your vegetables, mango and coriander and add them to a bowl
  • Toss your cooked prawns into the bowl. Squeeze the juice of half a lime onto the mixture and mix. 
  • Save with a tortilla wrap, on toast, on its own....the options are endless!
  • Enjoy!
