CREAMY, HEALTHY CHICKEN SALAD

Ingredients

  • Medium-sized cooked chicken breast
  • Salad leaves of your choice
  • 6 cherry tomatoes
  • 1/4 medium-sized cucumber
  • 1 spring onion
  • 6 flat leaf parsley leaves
  • 1 tsp light mayonnaise
  • 1 tbsp 5% fat greek yogurt
  • A pinch of salt
  • 1/2 tsp garlic powder
  • 1/2 lemon
  • 1/2 avocado

Instructions

  • Chop your vegetables, chicken breast and parsley into pieces and add to your salad bowl.
  • Mix your mayonnaise and greek yogurt in a bowl. Add the juice of half a lemon, garlic powder and salt. Pour over your salad ingredients.
  • Mix, add 1/2 a chopped avocado and enjoy!
