There’s nothing worse than a bland, dry salad and this recipe is far from those things! I season EVERYTHING and my creamy chicken salad is bursting with colour, texture and deliciousness!

Creamy salads tend to be quite high in calories but in this recipe, I cut down on the mayonnaise and replaced most of the creaminess with a lower in fat alternative, 5% fat greek yogurt. The Greek yogurt gave this salad some extra freshness and it is honestly my current go-to quick, healthy and filling meal!

Without further ado, here is the recipe:

Total Time 10 minutes
Servings 1 person

  • Medium-sized cooked chicken breast
  • Salad leaves of your choice
  • 6 cherry tomatoes
  • 1/4 medium-sized cucumber
  • 1 spring onion
  • 6 flat leaf parsley leaves
  • 1 tsp light mayonnaise
  • 1 tbsp 5% fat greek yogurt
  • A pinch of salt
  • 1/2 tsp garlic powder
  • 1/2 lemon
  • 1/2 avocado

  1. Chop your vegetables, chicken breast and parsley into pieces and add to your salad bowl.

  2. Mix your mayonnaise and greek yogurt in a bowl. Add the juice of half a lemon, garlic powder and salt. Pour over your salad ingredients.

  3. Mix, add 1/2 a chopped avocado and enjoy!
