PLANTAIN SALAD

Ingredients

  • 1 ripe plantain
  • 1 red bell pepper
  • 1/2 red onion
  • 1 tomato
  • 240g boiled black-eyed peas (cooked/canned)
  • Chopped parsley
  • 1 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. Cut your plantain into cubes. Drizzle with olive oil and place in an oven at 180*C for 20 minutes until cooked. Take out and let cool down.

  2. Chop up your vegetables and put them in a bowl. (Don’t chop the beans).

  3. Combine plantain with all other ingredients. Enjoy!
